Yellow tea

It is prepared from the buds and the youngest tea shoots, which undergo only partial fermentation (about 12-15%). It is characterized by a light, soft, a little bit tart taste with pale-pink colour.

In China, it is often called the “Imperial” tea, as in the past, it appeared only on the tables of the imperial courts and during religious ceremonies. In Europe, it is almost unknown and unavailable due to a long prohibition of export from China.
